Spring Cupcakes


Well it is ages since I did some Cupcake Posts and I have started to get withdrawal symptoms! So I decided to make some cupcakes. It is raining here in the UK and a good day for baking. So I made cupcakes as well as some old favourites ginger cake and fruity polenta cake. The Spring cupcakes are for friends . They are basic vanilla cupcakes with lemon icing and some decorations from Tesco. Quick easy to do and pretty as well as tasty.
Thanks to everyone who has been to the blog and also to my other food blogs. I am hoping to get them all going again. Crazycupcakes.

Can't wait to try some of these out! Those christmas fruitcake cupcakes aren't my cup O' tea but some of my family LOVES fruit cake so I might give those a shot around the holidays!

Hello! Just wanted to say hi. I live in Sydney, Australia and have been trying to make cupcakes. The icing method here is different - the icing sugar they sell here has to be combined with butter to make frosting. If you add water it goes this horrible pale runny stuff.. yes and this also applies if you only add a very tiny amount of water! Any suggestions for alternative icing would be great! Thanks :)

Thanks for coming by. That icing sugar is ok with a tiny drop of water. I use it in the UK. You can get drippy effects. I use the sugar also for royal icing which is harder and sets to a crust so you can paint pictures on it.

I see this is an old post but I just discovered it. I like cpcakes and was happy to see you have this recipe. I am very particular about topping so when I saw organic cocoa, I just said this is the cupcake I like.
