Slip Trail Icing

This type of decorating cupcakes is very traditional in the UK. I was taught the basics when I was at school.

Method

Take your cupcakes.

Make icing using icing sugar and water only.

Ice a base layer.

Make a second colour of icing .

I put this into a small piping container with a fine line nozzle.

I piped fine lines on top of the iced cupcakes whilst the icing is still wet.

Use a wooden or plastic cocktail stick and drag it across the cupcakes at a flat angle.

I wipe the stick after each pull through the icing.

Experiment with colours and different ways of making patterns.

You can use butter cream but it does not run and blend in the same way but it can look quite good.

This type of decorating is a technique that I have used in decorating pottery called slip trailing, perhaps you have tried this on plates or other pots at a pottery or ceramic class.
