
This is a recipe for another spice cupcake. I call this recipe
Cinnamon and Coffee Cupcakes recipe.

CINNAMON This links gives you some facts on coffee COFFEE I think it is a good combination. The cinnamon is in the sponge and the coffee is in the butter cream topping of the cupcakes
Ingredients
4 oz--110gm--1/2cup caster sugar
4 oz--110gm--1/2 cup unsalted butter or margarine
4 oz--110gm--1 cup plain flour
1 teaspoon of baking powder
2 eggs 1 tablespoon of milk
1 tablespoon of ground cinnamon
Method
Put the butter and sugar in a bowl and beat with a mixer or wooden spoon
Add the eggs one at a time and beat each one well.
Add the milk and mix.
Add the flour, baking powder and cinnamon powder (sieve together into the bowl with the other ingredients) and mix gently together.
Divide into cup cases and fill 2/3 s full.
Large cupcakes cook at for 15 to 20 minutes, small cupcakes for 12 to 15 minutes, both at gas 5, 375F or 190C in the middle of an oven.
Remove and cool I garnished with coffee butter cream and chocolate sprinkles
For the butter cream combine confectioners sugar with butter or margarine and add 1 teaspoon of instant coffee which has been dissolved in 1 teaspoon of water, mix well, spread with a spoon or pipe onto the cupcakes.
This makes about 10 cupcakes , double up recipe for more cupcakes.

I love cinnamon. I add a table spoon of finely ground cinnamon to my breakfast cereal every morning.
Cinnamon is good antioxidant, it contains anti-bacterial properties as well as being a good anti-fungal agent. Additionally, cinnamon is renowned for maintaining and balancing healthy blood sugar levels.
Therefore, any recipe containing cinnamon has my vote..

made the cupcakes today, quite disappointed ... found the texture a bit too hard, kids don't like them.

Sorry they did not work out. it sounds like they turned into a type of biscuit mixture. They could have been cooked too long. if they are in too long they dry out and go hard rather like a scone. Or the oven temperature may have been too hot. They could have been too high in the oven. Sometimes a recipe has to be altered to fit your own oven. Hope you find a recipe that works well and you would like to share.
