Easter Cupcake Nests

Oat and Rice Crispies Apricots and dates


Coconut

Glace cherries

Walnuts

Peanut butter, honey and syrup

The mixture melted in the microwave

All the ingredients together

The mixture divided into cupcake paper cases.

These cupcakes are a good alternative to the usual cupcakes. Last year I made very traditional simnel cupcakes so I decided on a change. These can be made easily and children will love them. My son and husband thought they were really good.
Ingredients
2 tablespoons of wegetable oil
5 tablespoons of honey or 3 tablespoons of honey and 3 tablespoons of golden syrup
4 tablespoons of peanut butter
100gm--4 oz--1 1/4 cups of rolled oats
85gm--3 oz--3 1/2 cups of rice crispies
70gm--2 1/2 oz--1/2 cup dates chopped
70gm--2 1/2 oz--1/2 cup dried apricots chopped
1/3 cup chopped walnuts
1/2 cup coconut
1/2 cup glace cherries chopped
1 teaspoon of cinnamon
50gm--2 oz--1/3 cup soft brown sugar
Method
Put the vegetable oil,honey,syrup and peanut butter into a bowl and heat in the microwave to melt it. Mine took 1 minute. I checked it every 20 seconds so it did not get too hot.
Put all the other ingredients into a large bowl.
Add the melted ingredients and mix well together.
Put 20 cupcake cases into a cupcake baking tray and divide the mixture into the cases. If you are going to put on chocolate eggs afterwards try to make a depression in the centre to hold the eggs when they cool.
Bake at 180C--350F--gas 4 for 20 minutes. I put them in the middle and just above the middle part in the oven.
Remove and cool.
I decorated with jelly eggs and chocolate eggs for Easter.
They keep well in a tin.
