Fennel Seed Cupcakes



Fennel Seed Cupcakes are made in the same way as caraway seed cupcakes but use fennel seeds in the recipe. I topped them with orange curd , my faithful flavour alternative to butter cream. They taste quite aromatic and the seeds have a crunchy texture. I tried these as I am experimenting with a selection of flavours from India, a country that has a fascinating range of flavours in its food. I have been to India three times and each time the food and sweet things have amazed me. In Manchester we have an area called the curry mile at the end of Oxford Road near Manchester University. It is full of restaurants and has quite a few Indian sweet shops. It is well worth a trip to try out these delightful textures , colours and flavours . I think cloves are one spice we all know to put with apples, raisins, pears and prunes. I am also going to see what goes with cardamon seeds.
Has anyone out there experimented with Indian flavours in their cupcakes? Please let me know if you have so we can all do some experimenting.
Has anyone in India made cupcakes with local ingredients?
