Coriander Cupcakes
I decided to try out cupcakes using different spices. This batch used ground coriander to make Coriander Cupcakes. The cupcakes tasted good just on there own topped off with a lemon or orange butter cream or cream cheese and then some ground coriander sprinkled over the cupcakes.I tried a few using coriander cupcakes filled with one of my favourites, Orange Curd (recipe on my chutney blog on the top left), inside the cupcakes and on top . I finished them off with fresh orange and grated orange rind. These were moist and delicious.
Ingredients
4 oz--110gm--1/2cup caster sugar
4 oz--110gm--1/2 cup unsalted butter or margarine
4 oz--110gm--1 cup plain flour
1 teaspoon of baking powder
2 eggs
1 tablespoon of milk or orange juice
1 tablespoon of ground coriander powder (not green coriander leaves)
Method
Put the butter and sugar in a bowl and beat with a mixer or wooden spoon
Add the eggs one at a time and beat each one well.
Add the milk or orange juice and mix.
Add the flour, baking powder and coriander powder (sieve together into the bowl with the other ingredients) and mix gently together.
Divide into cupcases and fill 2/3 s full.
Large cupcakes cook at for 15 to 20 minutes, small cupcakes for 12 to 15 minutes, both at gas 5, 375F or 190C in the middle of an oven.
Remove and cool
I filled my cakes with orange curd and also put some on the top.
I garnished with fresh orange and ground coriander.
They are also good without any filling, it is personal preference
This makes about 10 cupcakes , double up recipe for more cupcakes.
Variations
1.I think these would be good as a desert with a drizzle of orange juice and some grated orange chocolate or a segment of a chocolate orange.
2.Using Marmalade in the frosting would add a tangy alternative
