Vanilla cupcakes

This is the recipe for basic Vanilla cupcakes
Ingredients
4 oz--110 gm--1/2 cup sugar
4 oz--110 gm--1/2 cup unsalted butter or margarine
4 oz--110 gm--1 cup plain flour
1 teaspoon of baking powder
2 eggs
The seeds from 1 vanilla pod or 1 teaspoon of vanilla essence
1 tablespoon of milk
Method
Cream the butter and sugar
Add the eggs one at a time and mix in well.
Add the vanilla essence and milk
Sieve in the flour and baking powder
Mix gently together
Put into cupcake cases
Bake at gas 5, 375F, 190C for 20 minutes with large cases or 12 to 14 minutes for small ones
Cool
These are now ready for a topping of your choice.
I like a filling of raspberry jam and a swirl of fresh whipped cream topped with a fresh raspberry. Yummy

wow these are GOOD!
just made them and even my fussy partner LOVED THEM!
they go really well with a butter icing or for something a little different.... try passionfruit icing.
you can make it by sifting your pure icing sugar then adding fresh passionfruit pulp and the juice adding until correct consistancy is achieved. just make sure you give it a really good mix before adding any more to the mix. this saves having to add any extra icing sugar.

please try this at home. you will be loved i garruntee it!

ps. if you hav a hot oven like mine i found it only took 20min at 150dec/celcius

these are the BEST cupcakes i have ever had!

i made them with butter icing and because it's easter a little mini egg on top!

I am having a pink themed party for my daughter and wanted to make pink cupcakes. Could i add food colouring to this mixture to give them a pink look or will the colour of the eggs dominate?

Hi Amanda
If you add coloring they should go pink. The coloring is usually strong so add on a cocktail sticka bit at a time until you have the color you need. Hope this helps and thanks for coming by to my blog it is appreciated.

Hi, I'm having a problems with the shape of my cupcakes, they always come out with big peaks in the middle which makes it hard to decorate the way I want. Can anyone please tell me how to get nice flat cakes??

I find that in my oven which is gas that if I put cupcakes at the top of the oven where it is hotter they rise more and go into peaks. If I put them lower in the oven they come out more level because it is cooler.
Sometimes cooking a lower temperature means gradual cooking so they keep flatter.
Less raising agent in the mix.
These are some solutions. Can anyone else help Lindsey out?

Can you freeze the cupcakes before you decorate them? If yes, how long will they keep in the freezer?

it makes about 12 to 14 small cupcakes. Yes they will freeze and keep for up to 10 weeks .
